Explanation:
En las escuelas de artes y oficios la formación de "artisanat de bouche" es la del que reconoce los diferentes cortes de carne, sabe diferenciarlos en la res, sabe adobarlos para ciertas preparaciones, etc. En los restaurantes modernos hay un chef para cada plato (Chef de ensaladas, Chef de postres, Chef de pescados, Chef de carnes rojas, etc...) Creo que va en ese sentido. Suerte!
