Explanation:
"Total amount of products flowing between the two stores"

"Flux = flow"

or maybe "Total amount of products in transit between the two stores."

or "Total amount of products exchanged between the two stores".

or else: "total amount of products being moved (or circulated) between the two stores."

Not sure, but these are suggestions. I think I personally would opt for the first one, as it is closer to the English meaning, and I think the French term may have been borrowed from the English expression.
