In an isolated case, I'd agree with "operation", however,


Explanation:
"prises de commande" makes it look as if this referred to the registration of orders in an ENTERPRISE/COMPANY or on a FARM (Cf., Collin's Business French). Another instance that arose in Google dealt with information technology applications, in which "exploitation" meant OPERATION but "commande" was a computer command and not an order.
