French term or phrase: dissocié
This is what's on my menu.

tarte fine de rougets, féroce d'avocats
huile d'olives dissociées

it's followed by a squiggle and the next line which is

Dos d’Empereur à la Plancha, Cocos de Paimpol,
Langues de Coques, Emulsion de Chorizo

Does this mean that each of these items is separate
or does it refer to the oil, or more precisely the olives?

I'm confused, because I feel it's peculiar to state they are separate. Of course this may be one of those silly moments and someone will probably tell me the obvious, but I seem to be blocking on this one.

Explanation:
"Dissociées" agrees with "olives" because, I think, there are several oils on offer, each derived from a particular variety of olive. I love the idea of a ferocity of avocados.

disagree  Carol Gullidge: I believe pil pil is a sauce of olive oil infused with hot peppers. The emulsion in yr link is an emulsion of olive oil and cooking juices, not emulsified olive oil! http://spanishfood.about.com/od/cookingtipsandbasics/g/defal...

Explanation:
I can only find 1 g-hit forto "huile d'olive dissociée" - well, there are a few, but they all relate to the same, one and only, recipe http://www.akademia.ch/recettes/search.php?rech_globale=pist...

However, in that recipe, the olive oil is served "naked" on the rocket (ie, unadulterated, not mixed/emulsified with vinegar or anything else to make a sauce - left to make its own statement)

In this case, as it's in the plural, I'd envisage the separate olive oils perhaps served as sauces - either in separate pools on a (big!) plate nouvelle-cuisine fashion, or perhaps in separate sauce boats/dishes
