With relation to HACCP, need to translate the word 'libératoire' in terms of Critical Control Points being identified as 'libératoires'.

Hello,

I think they mean that once this "critical point" is fulfilled by the producer, he can no longer be held legally liable in that regard.

Example:

1) One critical point : producer is not to use any dangerous pesticides

2) Producer complies and doesn't use any dangerous pesticides.

3) In doing so, he can't be held liable if anyone becomes ill with pesticide-causing illnesses from eating his produce

I believe that's what they're saying here.
