I think you can have breaded lamb as well as lamb rice, but am stumped with this combination of the two.
Breaded lamb sweetbread does not sound right because of the repetition of bread. Also, as per the recipe (if this is the recipe from Fanny's restaurant, Australia), bread crumbs are not used, but pieces of bread. The French name is also added with "en croûte", which means with a crust or crusty. Interesting that this recipe is famous in Australia. Concise Larousse Gastronomique recipes also do not have bread crumbs ("breaded"). Hope this is of some help in choosing the right term or improving your translation.
