See, the problem is, the logic is wrong - they can't bridge that gap in the history of the restaurant. They (the reporteer and current owner) can only go back so far and Emile bertrand was teh original owner. It's almost like they're saying: "All we have to fill in the gaps is EB's name... does this make sense???
