Just an idea, it's a bit tricky without much context. Could it be a misprint for 'causalité'? If we had the rest of the sentence, I could tell whether that was feasible or not.

Caudalie : (cdl)
mesure de la persistance aromatique d'un vin : une seconde de persistance est égale à une caudalie.

Persistance :
impression de présence ou de rémanence que laisse le vin dans la bouche après l'avoir consommé. La persistance s'évalue en secondes ou en caudalies et est d'autant plus longue que la qualité du vin est plus élevée.
