Does anyone know what this means?! I searched everywhere and couldn't find it. It appears in a list of types of cheeses (like fondant, fondu, spreadable cheese, melted gruyere, etc.). Thanks, Karen

Cantal milk residue
Explanation:
Cantal is a county in central France, famous for its cheese, and also the name of the cheese.

Based on the following references and descriptions, I would guess that 'déchet de cantal' is 'cantal milk residue' - i.e. the substance left over when milk is turned into cheese, which can then be turned into a derived product itself.
