Le pelé royal est généralement de la boule d'aloyau, de la petite tête ou du trumeau. A part celà il y a le pelé 1 (platte cuisse, bavette au flanchet, faux filet, chapeau de curé, balle d'épaule) et le pelé 2 (tache noire, spiringue, coude, faux-filet, chapeau de curé). Pour les américains, l'aloyau est le fameux T-Bone steak. |
