Pour les flâneurs, de l'esplanade Saint-Michel à l'est à la porte Cadre à l'ouest, en contemplant depuis l’ancien bourg monastique, le panorama sur la célèbre grée et en dégustant sans compter le "bourg neuf" et ses fiers logis fleuris qui abritent échoppes, ateliers, maîtres artisans, métiers d'art, tables et hostellerie.

Il cliente mi ha detto che si tratta di un termine geologico che si riferisce a una barriera rocciosa. Vorrei però utilizzare il termine tradotto preciso...

Visto che si tratta del nome di una parte del comune non lo tradurei ma lo scriveri con maiuscola.

Le nom de la commune est constitué de deux parties "La grée" et "Saint Laurent". La Grée est originaire du breton Créh (ou C'hrav), signifiant hauteur, colline de pierre, ou crête[2]. Saint-Laurent est le titulaire de son église.

Ti suggerisco questa soluzione, che ha il vantaggio di dare una spiegazione del tipo di formazione rocciosa e di conservarne il nome, che in effetti come ha detto giustamente la collega, è considerato nome proprio.
