... Das Bild dagegen "knetet um", wie Goethe sinngemäß sagt ...
(es geht hier darum, dass Gemälde im Ggs. zu Fotografien nicht die Wirklichkeit abbilden)

I agree, but I think the verb needs an object (or 'a picture is the result of remodelling')

agree Kim Metzger : A pity we don't have more info to go on. Was Goethe referring to sculpture, painting, poetry (image) or what? I believe modelling is the correct term when it comes to sculpturing.

Kneten obviously means working with clay, because that's what kneten means - also used for kneading dought - but he's using it as an image for the way the painter reshapes the subject.
