fish kebab
Grapefruit bis auf das Fruchtfleisch schälen. Zwischen den Häuten Filets sauber heraus schneiden. Avocado schälen und in Würfel schneiden. Rucola waschen, verlesen, abtropfen lassen und in Streifen schneiden.
Bacalao in Streifen schneiden und ???rosettenartig??? auf Holzspießchen stecken. Salatzutaten und Salatsauce mischen und in Cocktailgläsern anrichten. Mit Fischspießchen belegen.
They are talking about a smoked fish kebab. Can i say -thread them onto skewers forming rosette shapes or small rosettes?

If the fish is cut into strips, I would imaging it needs to be rolled up into a circular shape, and then threaded onto the skewer through the middle so it stays in place.
Thread the rolled up fish onto the skewer
Thread the fish strips/pieces onto the skewer so that they resemble rosettes
It's the only way I can think of turning strips into rosettes.
If it was chunks (circular), once skewered they would look rosette like if pierced in the centre!
