German term or phrase: Bootsschleppe
Auf diesen zwei Seiten wird recht gut erklärt, was die beiden Begriffe oben bedeuten:

Aber ich finde die englischen Fachbegriffe einfach nicht... kennt sich jemand auf dem Gebiet aus und kann mir weiterhelfen?
"Slipway", "boat ramp" etc. scheinen eher allgemeine Begriffe zu sein...

A suggestion after finding what follows in Encyclopedia Britannica:

Lock bypasses
....Canoes are normally brought ashore and manually moved around a lock on a portable trolley; larger pleasure craft can be transported on a cradle that is mechanically towed on a lockside rail track.

Your second link details a boat trailer, on which a boat is placed and led to (or from) the slipway. The trailer is then lowered into the water, and the boat released from the trailer when it is able to float.
When used for launching and retrieving small boats, the trailer is placed in the water. The boat may be either floated on and off the trailer or pulled off. When recovering the boat from the water, it is winched back up the trailer.

A boat trailer is a piece of equipment brought by the boat owner or the marina owner to the water and used to launch the boat on the slipway. If the "Bootschleppe" in question is a fixed piece of equipment that slides up and down a track or chain, then this would be referred to as a boat lift.
