Eine Vortufe der Teigzubereitung, bei der Schrot oder Mehl mit heissem Wasser vermischt 1-3 Stunden zum Vorquellen auf die Seite gestellt wird. Die Getreideschalen werden dadurch weich, die Krume des Brots wird elasticher, die Frischhaltung wird verlängert.
