filetto di pesce persico Explanation: Secondo me è un errore di battitura: Egli (Perca fluviatilis) Beim Egli gibt es hier am Bodensee ein heilloses Namensdurcheinander. *Barsch* ist die hochdeutsche Bezeichnung, wogegen Kretzer der alemannische Ausdruck für ein und denselben Fisch ist. In der Schweiz wird Kretzer als ganzer Fisch gehandelt, wobei Egli nur die ausgelösten Filets bedeuten. Auf deutscher Seite wird der Name Egli durchaus auch für den ganzen Fisch verwendet. Für viele ist dieser Fisch der beste überhaupt. Er ist kräftig im Geschmack, bei sachgerechter Verarbeitung saftig und interessant. Der Kretzer schmeckt gebacken oder meunière am besten.
