Explanation:
The term seems to be commonly used in German to imply manufacturing of items (e.g. machine parts) to someone else's order or specification. The trick is to find a term which is as unspecific as "service" to describe this.

I would have thought you could translate "auf Lohnfertigung und Service ausgerichteten Unternehmen" as "manufacturing and service companies" without losing much of the meaning. If you want to be more specific, perhaps "manufacturing subcontractors and service companies" would be better
