In its advertising, this company divides its cheeses into three categories: Mild-fein, g’schmackig, würzig-kräftig.

I was thinking of "fine-and-mild" (pun on weather reports), "tasty" and....

I'm assuming what würzig means is more or less up to one's imagination and that the description of cheeses is not an exact science. Here are some descriptive terms I found:

Rich, robust, mild, salty, sharp, nutty, mellow, piquant, tangy, aromatic, pungent, ripe, aged, astringent, bitter, earthy, fruity, gamey, grassy,

For würzig you might also consider: tangy or piquant or even pungent
For kräftig you might consider: robust. Thus you would have a tangy-robust cheese.
I like fine and mild for mild-fein.

Ubless it's with chillies or something, I would go for "sharp", as in "sharp cheddar", rather than "spicy".

agree  Nesrin: That leaves Richard completely spoilt for choice! I like "nutty". Is "mature" a possible translation of "stark" (mature cheese as opposed to mild cheese)?

  -> Swiss cheese is nutty, but I don't think nutty would work for würzig or kräftig . I think you're right about mature.
agree  writeaway: sharp seems to work best all around for würzig. Limburg or Munster is pungent, but the aged cheddars, gruyeres, emmenthals and even Gouda are definitely sharper than their fresher, less mature versions.

  -> I'm afraid I have rather pedestrian tastes when it comes to cheeses. My favorite is extra-sharp cheddar./ I have my son smuggle some in to Mexico when he comes down.
