granting a sub-interest/ sub-right
Explanation:
I don't think sub-participation works here.
Participation is usually used to describe 'Beteiligungen' in e.g companies. I don't think you can have a 'participation' in a right/ interest

sub is however a good prefix 'subtenancy' 'sublease' etc are both examples of kinds of Unterbeteiligung in contractual rights

so, if I were you the segment might read
... shall not transfer (by way of assignment, pledge or the granting of a sub-interest/right), the rights under this contract...

encumbrance of a right

Explanation:

Just checked on google; many many hits for "assignment, pledge or encumbrance of a right"
or, alternatively 'incumbrance'

which would have the same legal consequence as 'Unterbeteiligung'; the rights are encumbered by being partially transferred to a third-party (e.g. perhaps by way of a security interest) so maybe it would do.
