Is there a special term for this type of agreement, which cancels a contract of employment?

I don't think there's any special term to speak of. Being that it's somebody's employment, termination seems to be the fitting equivalent. The +employment +termination agreement combo yields some 600 results in 500 sources on the Northern Light search engine, one such site being given below.

Also, the Romain Dict. of Legal and Commercial Terms calls an "Aufhebungsvertrag" a "termination agreement." I know it's general and can be used in different contexts, but "termination" is the most common choice when dealing with ending somebody's employment in a formal context.
