Explanation: Kundenstamm is generally translated as customer base. You could also use clients, but I wouldn't use clientele here; it just doesn't sound right. I wouldn't use "observe" here, either, since it evokes images of Big Brother. Usually the customer data is collected in data bases from which it can be retrieved for various marketing purposes. "view" would be the better term to use for that.
"target" should be self-explanatory. It's often used in marketing when a particular segment of customers is to be addressed. See if it fits within your context.
Explanation: Segmenting is not really a usual term with regard to databases at a user level. Sorting according to certain categories, i.e. classifying, yes.
It depends on whether this is being done at the user level (i.e. handling actual data on screen) or at the programmers or supervisors level, i.e. organizing the internal database structures. In the latter case, segmenting could indeed be a good term.
