German term or phrase: Abzieher
Teigstücke abwiegen. Bei 3/4 Gare auf Abzieher stürzen and nach Wunsch schneiden.

Explanation:
Muret-Sanders lists "racker" for Abzieher in the context of breweries, and that got me to thinking that bakeries, too, use racks for their products.

Storage racks, cooling racks, etc., even rack ovens (cf. www.bakery-net.com/rdocs/rvnthist.html).

It also occurs to me that "abziehen" in this context might refer to "Wärme abziehen lassen", making the Abzieher a cooling rack - but that's just a guess.
