Dazu gehört die nützlingsschonende Bearbeitung der Weingärten. Durch kurzen Rebschnitt, ausdünnen der Trauben und intensive Laubarbeit werden die Voraussetzungen geschaffen um gesunde und vollreife Trauben zu ernten. Der schwere Lehmboden verleiht den Trauben zusätzlich eine ganz typische Würzigkeit. Die vollreifen Trauben werden sorgfältig handverlesen und danach schonend weiterverarbeitet. Unmittelbar nach der Vergärung wird der biologische Säureabbau eingeleitet.

In the Anninger red wine vineyard (or since it\'s a proper name, leave it as Rotwein Hof Anninger) we are not only dedicated to quality oriented wine production, but also to natural (organic) viticulture. This includes conservation of beneficial organisms in the vineyard. By close pruning, thinning of the grape bunches and intensive training of the vines, the conditions for the harvest of ripe and healthy grapes are created. In addition, the heavy loam soil gives the grapes a distinct aromatic flavor. The vine ripened grapes are carefully hand picked and afterwards carefully processed. Acid biodegradation commences immediately after fermentation. -I hesitate to use the word organic production without further information, as the laws vary radically from place to place as to what constitutes true organic production, but it may indeed be appropriate.
