I'm sure it is 'Mit einfachen BeschlägeN', but enough nitpicking. Beschläge have their origin in beschlagen which means to attach a metal plate to something. In the context of horses it took on the meaning of putting horseshoes on horses (metal plates attached to something, right?). Two-part answer: Beschläge can be face plates which are the parts of a door handle that are not the knob, strike, handle, spindle, or lock assembly.
