Anhalt Vocational School Center
Explanation:
If you feel you have to provide a translation for the name of this institution, I would advise using plain "Anhalt" rather than "Anhaltian." In English usage, institutions named after their home city or region typically use the name of that locality without resorting to an adjectival form. For instance, we say, "the Houston School of Business," not the Houstonian School of Business."

Of course, there are exceptions, as in "the American University" and "the Swiss-American Bank." Notice that such names that use the adjectival forms usually do not refer to a locality, but rather to an ownership, an idea, or an honorary reference. When the reference is to an actual location, especially a city, the noun form is preferred.

This is not to imply a rigid rule, just a usage preference.

Anhaltisches Berufsschulzentrum

Explanation:
Shouldn't this read Anhaltisches, not Anheitisches (espec. since you say the school's in Sachsen-Anhalt)? Maybe a bad fax copy?
I'd leave the German name and add "Anhaltian Trade School Center" in parens.

Several hits on "Anhaltian", cf. below, but Muret-Sanders says "(of) Anhalt". Your call. But I'm certain that it's not Anheitisch.

Vocational School Center of Anhalt (or Anheit)

Explanation:
I think the word "Anheitisches" stands for the city of district (Anhalt).
"Anheitisches" is NOT a word.
