We are dealing with the contract covering a contractor's work for the installation of equipment in a chemical plant.
Would Assembly Manager do?

I would prefer "installation" to "assembly" as plant components are usually "assembled" partly or completely at the works (assembly line)of the producer of these components and are then "installed" at the customer's location by the installation technicians. Installing is a blue collar job. "manager" sounds too much "white collar" and "chief engineer" is too general. "supervisor" is most appropriate to describe the function of overseeing the installation activities on site.

Yes, it would do. Altenatively I could suggest assembly foreman, depending on the size of the firm. A foremn is in charge of a shift or a gang of workmen, the manager would be in overall charge of the whole assembly.

And "Leiter" is no problem.
