This comes up the the chocalate-making process, along with conching. I think it might be larger particles that come out of the rollers or something like that. Does anybody know anything more about this and what it would be called in English?

When I looked up 'tourteau' on the web, however, it seemed to be a form the of the processed cacao before undergoing the conchage.
But the suggestion was appreciated, just the same.

the tourteau? see links for chocolate-making process and terminology. The 'rolling' process by the way is called a 'conchage'. French terms are used apparently.
