Dovrebbe essere Oberssauce, vale a dire una salsa con/a base di panna. In Austria, si usa Obers in Germania Schlagsahne per panna. A mio avviso, qui si tratta di una salsa che viene "corretta" con qualche cucchiaio di panna. Saluti. Gabriele |
