Selchfleisch è lacarne affumicata; il Roller mi lasciava un po'incerta ma forse hai ragione tu, per farcire i tortellini prendono la parte della spalla che è meno pregiata.

Che poi si usi la carne affumicata come farcia, mi riesce nuovo.

ma aspetta altri suggerimenti

se poi Roller fosse austriaco per Roulade, sarebbe involtino. Rollé l'ho sentito spesso ma non ci giurerei..
