Hindi to English translations [PRO] Cooking / Culinary / Spice
Hindi term or phrase:Balai
It is used in cooking. I think it's a spice. The word is probably Indian-origin (not sure abt the etymology, but it IS used in Indian dishes).
What is the English for it ? If there is no correct/exact English for this, then can you please descibe it for me ?
Explanation: Balai or Malai (in Hindi), cream (in English)
1. Boil the milk in a wok (kadhai); add the sugar and cook on low heat, stirring continuously. As the milk simmers a layer of cream will form on the surface. Push this to the side of the wok.
The city of graciousness and fine dinning has its own breakfast specialties. Balai, or milk cream but not quite that, is a delicacy. Balai (Bala meaning ‘upper) was the name given to the cream by the late 18th century Nawab Asafudaula and continues to be called that."
