Italian term or phrase: vedere il notaio nella giungla
"uno" relates to a knife the author was recommended to pay a lot of money for for a hiking trip. I am unsure on the sense of meeting a lawyer/notary in the jungle, and how this relates to the risk-free way the knife was designed.

Me ne fecero fare uno ed era organizzato per impedire che qualcuno potesse farsi male, anche se mi regalò l’esperienza di vedere il notaio nella giungla.

(the spectacle of) seeing the notary in the jungle
Explanation:
I detect sarcasm here and it seems to be saying although the survival course was tame at least he/she could enjoy the spectacle of seeing the/our notary in the jungle (environment).
Il notaio could refer to someone the speaker knows personally or to the notary/lawyer as a stereotyped figure of importance and a desk job grappling with an extreme situation in the jungle

I suspect uno refers to a survival course rather than the knife? They made me do one.

agree  BdiL: Absolutely with you! A knife cannot be risk-free, but a survival course can be designed to be. Fiona Grace Peterson's first note gives a very plausible explanation.
