Italian term or phrase: prelevare un U.V.
This acronym "U.V" has me stumped. This is in a document describing the microbiological analysis procedures to be performed on finished food products, testing for various microorganisms including Listeria, Salmonella and E.Coli.

"Il campionamento viene eseguito da personale interno, prelevando un U.V. a random durante la produzione, e inviato a laboratorio esterno accreditato."
