Although “animation” is the straight forward translation for “animazione” I think that if there is no reference in the document of “cartoons” the term “activities”, being more general will better cover all angels.

I totally agree with simon on activities - animation in english doesn't match the italian animazione in this sense - but I'd add playful in order to better render it. imho, 'therapeutic activities' alone might refer to rehabilitation, learning, and a number of other activities, and does not head straightforward to 'animazione'.
