Italian to English translations [PRO] Cooking / Culinary / Types of Prosciutto?
Italian term or phrase:prosciutto grasso e magro
Hello! I'm working on translating an old Italian cookbook for "Minestrone alla Fiorentina" and in the first sentence it instructs me to "Mettere in una casseruola un po d'olio con un trito grossolano di cipolla, poco aglio e qualche fettina di prosciutto grasso e magro."
I know there is a difference between prosciutto cotto and prosciutto crudo, but had no idea there was a difference between prosciutto grasso e magro. I understand the one means fatty and the other means light, but what would that entail if you were to buy this prosciutto? Is it prosciutto crudo without the fat pieces on it or is something completely different?
that's the description of soffritto, usually made with pork belly (pancetta) or guanciale (pork cheeck), both having a large part of fat, necessary to fry, hence the name soffritto. prosciutto is an alternative pork meat form another region but still fat must be present
