Se i napoletani diventano così "mangiamaccheroni" (e si salvano per questo dalle deficienze alimentari dei poveri del nord), nelle altre regioni la diffusione della pasta non è così rapida, e i maccheroni, abbondantemente conditi di formaggio (il pomodoro inizia ad essere usato solo verso il 1830), rimangono un cibo da ricchi, una corposa utopia del "paese della Cuccagna".
