I have already answered this question, but as it has appeared twice I would like to add that although "in carpione" is certainly used for a style of preparation (as your other answerer suggests), in which (I think) the food is soused in a pickled sauce, it seemed to me that the "carpione" in your sentence is more likely to refer to the fish of the same name than a generic type of dish.
