Italian term or phrase: vinacce
Mentre il vino riposa nelle cantine, le vinacce prendono la strada della distilleria
Non riesco a districarmi tra i seguenti termini trovati:
dry matter remaining after pressing/residual pulp e grape marc
pietra
English translation:pomace
Explanation:
"Pomace" is the generally used English term for the residue of fruit processing in general, and of cider- or wine-making in particular, from which residual sugars may be recovered for distillation. It is also the term I have recommended to the team of translators currently working on the Gambero Rosso Italian Wines 2001 guide.

BTW, the Oxford Companion to Wine makes it clear that "marc" is the French term for either pomace or pomace brandy (i.e. "grappa").

pomace

Explanation:
I found this term used in a magazine article written by a wine expert. The article discussed the production of distillates, specifically marc and grappa.
