This part of the job i am working on relates to a marketing pamphlet for the diet products, aimed at the buyers not the clinicians and dieticians involved in other aspects of the work, this is the sole reason i am reluctant to use cocoa flavoured.

For example, below I have the list of oingredients for a cake described as "chocolate" but in fact containing "cocoa"
2 Sticks Butter
2 cups Sugar
4 1/2 tablespoons Cocoa
1/2 tablespoon Hot Water
1 teaspoon Baking Soda
2 cups Flour
2 Eggs
1/2 cup Buttermilk
1 teaspoon Vanilla

Thus it seems perfectly acceptable to use cocoa as an ingredient, but call the end product "chocolate".

This doesn't unfortunately clarify the issue in any way.

You raise a very valid point in relation to the "additional ingredients" which are implied in chocolate flavour as opposed to cocoa flavour, and these are exactly the types of ingredients which would make a difference in a snack bar that is part of a diet program aimed at strictly controlling levels of insulin and glucagon. This is also compounded by the company having other products which they quite clearly (and shamelessly) label as chocolate flavour.

This still doesn't dispell my worry that since such dietary products may be new to this company, there are plenty of other comapnies with pretty much analogous products alrady on the market, but none of them seem to describe their protein bars as "cocoa flavour" - incidentally I've noticed that internet hits are higher if you use the American spelling. Slimfast describe their energy and protein drinks as "cocoa flavor" (US) but describing a drink as such is much more in keeping with perceived convention as opposed to a solid bar. I will be convinced of the use of "cocoa flavour" if someone can find me an example of a solid food with that description (in English - Italian ice cream products are not allowed!). However, in summary, I am moving towards accepting "cocoa flavour" but would like some further evidence.

... cocoa (or rather cocoa derived fats and solids) are the "active ingredients" in chocolate - to borrow a phrase from the pharmaceutical industry. Hence, cocoa and chocolate ARE very much the same thing on that level.My main worry, is that I've never seen any of these products (snack bars - like special K bars, pesoform, slimfast etc.) described as "cocoa flavour" and indeed searching google for snack bar + "cocoa flavour gives very few hits, with dubious context.
