Italian term or phrase: ritiro fusti
I guess that fusti are drums or kegs. But what is happening to them in this process?

Your other answerers have given you some good proposals for "fusti", a widely used word in Italian that can also denote a tree trunk(!), a muscular and handsome man(!), a carton (e.g. of washing powder), and various other package formats (tubs, generic containers, etc.). I think that "collection" is the most immediate translation for "ritiro", unless, that is, it's got something to do with, er... shrinkage. Nahh, surely not!

"ritiro fusti" is out of context, but they may very well mean "drum pick-up", if they are talking about picking up the drums from somewhere, or from a machine, or machine conveyor.
