Italian term or phrase: sfilo
On-line help files:

Queste due operazioni vengono fotografate nel log tramite l’operazione di *sfilo*, che vuole evidenziare le trasformazioni subite dal movimento.

English translation:sequence, roll out, string out
Explanation:
I'm guessing: given the last part of the sentence (to show the transformations brought about by movement), I understand sfilo to derive from "sfilare = susseguirsi, succedersi, passare in sequenza, procedere in fila", so something like sequence, roll out, string out, i.e. laying out in linear form the various transformations, possibly as a sequence of images/snapshots/frames.
But it really depends on the context: what kind of "operazioni", "trasformazioni" and "movimento" are we talking about?...

All the suggestions were really helpful, thank you. In the end I chose *unravel*, after finding some reference documents online. BTW, it's an ERP system (this section is for banks).

Explanation:
Very difficult without more context, Sarah.
Sfilare (apart from the fashion show context "to model") can be to slide off, as in removing something - perhaps an item of clothing from a machine?

to separate the threads / to take threads from

Explanation:
I agree with Angela - difficult without context. Se pensiamo a: sfilare la tela per ricamarla - to pull threads out of linen in order to embroider it. I think it should help.
