Italian term or phrase:pasta filata
La filatrice M92 è adatta per produzioni medio-elevate in continuo di pasta filata
The asker has declined this answer Comment: this is interesting but in a website I found spun paste.
Explanation: Just as an add-on to Derek's answer, I have "The Book of Food" by an English food writer and it covers practically every ingredient on the face of the earth. Mozzarella (a pasta filata cheese) is referred to as a stretched-curd cheese. So I would imagine that what gets stretched in your case is the curd!
... Plastic curd. Generic term for cheese made by immersing the curd in hot water and working it until it becomes elastic and can be moulded into the shape required ... www.cheeselinks.com.au/glossary.html
Although you don't mention cheese, I presume your "filatrice" is for making this kindo of product as I don't think "pasta filata" can be other than cheese.
