Explanation:
Just as an add-on to Derek's answer, I have "The Book of Food" by an English food writer and it covers practically every ingredient on the face of the earth. Mozzarella (a pasta filata cheese) is referred to as a stretched-curd cheese. So I would imagine that what gets stretched in your case is the curd!

"Stretch curd" is also OK, or you could use the Italian expression "pasta filata" (cheese), perhaps with a brief explanaation.
