With dish names it is really hard cheese, because they are often given very sophisiticated names, that do not reflect what the dish actually is. Moreover, these are sometimes strictly local specialties.

My strong advice to you is to find out what the dish really is in the first place, and start the translation from there.

Actually,
WĘGRZYN = type of Hungarian wine (as The Great Polish-English Dictionary explains), but you are lookin for a wild game dish.

Try to find out what's the animal name, which part of the animal body is used for the dish, and how it is prepared. You could build the English name from this. E.g. Deer loin with cheese fried on butter.

By the way,

ANCHOVY = SARDELA
and uwe is right.

Try the procedure I described above and avoid serving fish to the customer ordering for example rare steak....
