Explanation:
Aurelio gives "manufacturing" (fabricacao) or "produto de uma fabrica" as the only definitions, which jibes with my initial impression about this word. I don't know about ETA or ETDI, sorry.

"brewing" is also good, but less technical. Look how the phrase is constructed: "filtration" and "..."
MANUFACTURING/PRODUCTION would have been the whole process - here the original specifies: "filtration" and FABRICO. Since it clearly splits manufacturing in 2 stages, it is (most certainly) - "brewing/fermentation".


    Only by logically analysing the whole phrase
