НДМА = N-нитрозодиметиламин
НДЭА = N-нитрозодиетиламин

These two substances are put into Russian Standards of food quality. Any sertificate (especially for meat and fish) MUST contain the characteristics like NDMA and NDEA concentrations. This measures the so-called N-nitrosamides which are known as possible causes of some of cancer diseases.

These abbreviations are seemingly useful in USA (see the http below):
