Explanation:
1."средним обменам/средним оборотам" или они хотели написать "80 % среднего обмена/среднего оборота" и забыли "%"

2. Вместо "среднего" попробуй "суточного", жто даже кажется более вероятным, но все же не уверен насчет "о". Может стоит уточнить у заказчика.

Если не проценты, то м. б. смена объема, но это не вполне грамотно и не лезет в контекст (при таком режиме просто ураган получился бы). А 80% звучит, пожалуй, разумно.
