Se trata de un texto sobre anchoas saladas. Cuando explica los diferentes procedimientos en cuanto a su elaboración, aparece lo siguiente:


1. Retiro de pastón:

La materia prima utilizada para el siguiente proceso es anchoas saladas de propia elaboración, estando estas en curso de maduración.
Comenzando la tarea se retiran las piedras prensa del tambor y la capa de sal (paston) que cubre la parte superior del envase, lavando superficialmente con agua a temperatura ambiente.
