This is in a factory making clothing. It makes reference to tejido plano and tejido knit. I find flat-weave in Eurodicautom, but would like to check.

This sounds to me like the supervisor (or foreman) of the flat fabric section/area, especially in light of the "muestrero" question, which also seems to refer to a job category.

I am sure it is "flat fabric". This is the term used in the weaving industry.
