Multiple web searches failed to turn up any specific connection between bees, beekeeping, apiary science, pollination, etc. and the phrase, so a literal rendering might be the most advisable: "...started to produce coronary heads..." -- Hope this helps, even if just a little.

Explanation:
Claudia's suggestion sent me on a different search, which turned up a detailed article about the cultivation of chrysanthemums:

"When flower buds show, remove all except those on the top 3 inches of the branch. As these top buds develop, notice the first, or crowned, bud. When you are sure it is healthy and well developed, pinch off all other buds…"

So, it seems that the "testas coronarias" are being produced by the flowers, and the bees play their role later...!
