(Also submitted as cataln question)

Although this is in fact Spanish, it comes from a Catalan text (about a wine co-op). I can't find 'estirage' and wonder is it some kind of peculiarly Catalan tax on wine?.

Also the remainder of the sentence is confusing, so i would like a translkation draft, if possible. As someone commented in a previos question, it's old Catalan/Spanish and incredibly long-winded.

Thanks a million!

drawing-off, or (possibly) racking
Explanation:
Term in viniculture, with two meanings, according to the web site below:

1) Racking, or the drawing-off of wines from their lees. It is a most important operation and some types of wines are racked many times. As an old saying has it, "The racking can make a wine."

2) The term is also used to describe the drawing off of spiritous liquors from large casks to smaller ones.

DRAWING??

Explanation:
Hi Ailish!
I've looked up the word everywhere but can find nothing that even remotely fits your context. The only synomym I can find that might even remotely fit is "drawing". This is really a wild guess and I hope you get a better answer from someone else.
