We "set" the price of a currency.
(Si hay varias definiciones, huele a pod****). We define terms (tasa de cambio, MIBOR, etc.).

I’ve seen in the definitions part of many contracts something like this: “dólar: se entenderá como dólar la moneda de curso legal en los Estados Unidos de América (por ejemplo), el/la cual para los solos efectos de cumplir con lo dispuesto en la Ley del Banco Central de Venezuela equivale a xxx bolívares [a medida que pasan los años, es mayor el número de “xxx” por cada dólar]. I think that in this context we can “define the dollar and/or its price”.
